We love our salads!
I have people tell me all the time how boring salads get and that it’s hard to find ways to spice them up.
Well I got one for you today that will help you mix it up a little.
This is one of Coach JC’s favorite!
We have been using Kale, before Kale was “Cool”.
Coach JC cooks it, juices it, throws it in smoothies and eats it like a salad.
It took me a little bit to get used to the texture and strong taste but now I do really enjoy it.
I wanted to enjoy it raw as a salad so I played around with some ingredients until I found the perfect combination…
and BAM!
Mr. and Mrs. Coach JC’s Kale Yeeeeeeeaaaaaahhh Salad!
Here are the items you need for a serving of 2:

3 huge handful’s of kale (use more than you think you should, b/c once you make this recipe, it’s like the kale disappears)

A few shakes of garlic powder, salt, and pepper

Half of a squeezed lemon

1 ripe avocado
-
Goat cheese
-
Sesame oil or olive oil
This has to be one of the fastest recipes to make and it is sooo yummy.
Make it Happen in Only 5 Moves!
1. Take all of the kale leaves off of the stems, throw away the stem and wash the kale leaves.
(Make sure to drain and squeeze the water out as much as possible.)
2. Drizzle your sesame oil over the leaves so that the rest of the recipe will stick to the leaves.
3. Shake your seasonings over the leaves to your liking, and use the squeezed lemon to drizzle over the top.
4. Take your avocado and cut it in half, place the goodness on the kale.
5. Place this in a big bowl, take off your jewelry and start mashing/mixing it with your hands until the kale starts to soften a little bit.
(Sometimes I also add about 3 tablespoons of Bragg’s Vinaigrette dressing in the mix, yum.)
***Top it off with some crumbled goat cheese and there you have it!
For the best tasting Kale salad I place it in the fridge for 30 min to chill, then serve it with the remaining avocado sliced on top with the goat cheese.
Don’t’ forget, you can add as many veggies and goodness on top as you want.
Some of Coach JC’s favorites are bell peppers, cucumbers, tomatoes and cashews.
A Little Extra Benefit
One of the many things I love about kale rather than normal lettuce, is I can make this salad, have some left for lunch the next day and it isn’t soggy.
If you are going to a party or Bar-b-que, offer to make the salad and show up with this healthy side dish that will have everybody loving you.
