Jodi’s Salmon Cakes

Today’s WINNING recipe to meet Coach JC’s 10 WINNING Habits is our own Jodi’s Salmon Cakes. “Where is my lean protein?”

Ingredients:

3 cans of salmon, de-bone them and place in a large bowl with all ingredients
2 cloves of garlic diced up
1/3 onion, diced up
1 jalapeno diced up (take out the seeds)
2 eggs
4 shakes of Cheyenne pepper and dill weed
1/2 plain bread crumb
salt/pepper/garlic powder to your liking

Directions:

Mix all ingredients in a bowl. It should be moist but not too wet (Enough for it all to stick together.) Make into patties (about a handful size) thinner. I don’t like them thick because then they are mushy in the middle, and we prefer them crisp on the outsides.

This usually makes 6 decent size salmon cakes for me. I get two large skillets and drizzle grape seed oil or coconut oil (coconut oil gives it a different taste, JC likes it this way, and I prefer it with grape seed oil so we do half and half) and heat it up on a medium to high heat. I like it to be pretty hot when I place the patties in my pan which gives it the crisp on the outside.

Since the ingredients are almost all cooked already (except for the egg you put in the recipe) you don’t have to cook them too long. I usually do about 5 min on each side. Keep a watch on it so they don’t burn.

This takes me a total of about 18-20 minutes from prep to cooking and ready to serve, on the salmon patties.
