Zucchini and Carrot “Fries”
How about trying Zucchini or Carrot Fries for your next side dish?
Zucchini (cut into 3-inch sticks)
Carrots (cut into 3-inch sticks)
Salt and Pepper
(Could use other spices as well: paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage)
Preheat oven to 425 Degrees.
Line a baking tray with baking paper and a light layer of olive oil.
Prepare vegetables, cutting them into 3-inch sticks of even thickness.
Lightly toss vegetable sticks with about 1 tablespoon olive oil and salt and pepper or seasonings of your choice.
Spread the seasoned vegetables on the lined tray and roast, tossing halfway through, for about 20 minutes or until golden and slightly browned at the edges.
